As we are approaching colder weather,
warm Sunday morning pancakes sound like the perfect option to combat the chill in the air. However,
traditional pancakes are known for being full of refined carbohydrates and
unhealthy fats. This recipe is a simple alternative that barely compromises the
delicious taste and texture of your favorite pancake recipe!
Oat Pancakes
Serves Two.
Ingredients
- 1 cup of dry oats
- 2 eggs or 6 tablespoons of egg whites
- ½ cup of milk (I use coconut milk)
- ¾ tsp baking soda
- ¼ cup of applesauce
- Optional: ¼ cup of chocolate chips or blueberries
How to Prepare
- Blend the first five ingredients in a blender.
- Heat a griddle or pan to medium heat.
- Spray the pan with non-stick spray or coat with butter.
- Pour batter on pan in 4 inch circles.
- Add fruit or chocolate chips before flipping.
- When bubbles form, flip pancakes.
Best enjoyed with pure maple syrup and
turkey breakfast sausage!
